life feels like it is going 100 mph right now. i was riding the train home last night with one of the girls i work with. it was 2:30 am. long dinner service and i turned to her and said "i can't remember if i showered this morning. i mean i am 80% sure it was this morning. but honestly. i can't remember if that was today or not. for all i know it could have been yesterday." regardless i should know when i shower. but the days are blending together. and my eating/showering/living schedules are all sorts of fucked up right now. i don't get home from work till 2 or 3. i am lucky to be asleep by 4 and then i try to be up at 11 to leave for work at 1 and do it all over again.
the Michelin guide came out this week. it is the most prestigious scale out there. it's based on a three star system. in all of new york there are only 4- 3 star restaurants. i think about 8-2 star and maybe a couple dozen 1-star restaurants. we only got 1 star this year. when i worked at bouley a couple yeas ago we had 3. regardless, the fact that they closed and reopened in a new location and still got 1 star is a pretty big deal. just kind of sucks that we got knocked downed. but it didn't kill our reservations at all. we did more people tonight then they have ever done in the new location (226). it was a nonstop busy service lasting till a little after 2 am. but to celebrate david bouley opened a few bottles of champagne for us. it was busy and you reach this point where you just want it to end but you know you still have a few hours left. but then at the end of the night you have this feeling like you survived. and you put out good food. that is why i love this. that feeling. i can't explain it that well. but everyone comes together and starts talking about the night. and it's like you all survived, and everyone in the kitchen is just a little bit closer because of it.
on not restaurant news...kat finally lives here. the laverne to my shirley. only she can call me and tell me to be at some random address in the city in a half hour and i will go. no questions asked about what we are doing. i just know i should be there. even though our friendship is just starting to pick up again i feel like she is a keeper.
